BBQ Side Dish
- Baby leeks
- Red onion
Preheat the oven to 200°C/400°F/gas 6.
Roasting vegetables should be done at high heat so they caramelize on the outside.
Alright, time to chop, drop & show off some colorful veggies !
Brush and clean the carrots.
Peel the red onion and cut into half.
Wash and trim the baby leeks.
Scrub and peel the beets.
Trim off stem and root ends, halve or quarter them.
Leave the cloves of garlic in their skins but squash them a bit.
Wash and remove leaves and woody stem of the cauliflower.
Break into florets.
Put all the veggies in an extra large roasting tray.
Scatter the thyme over the veg. Add a good pinch of salt and pepper.
Drizzle it all well with olive oil, then toss to coat (some tossing skills required).
Roast your veg in the hot oven for around 45 minutes.
Give them a good stir every now and again.
Just look at what a colorful side dish you just created.
