United Tastes of GreenPan: Moroccan cauliflower couscous
Ingredients (serves 4)
- 1 cauliflower
- 1 tablespoon peanut oil
- 4 tablespoons pistachio nuts, finely chopped
- 2 teaspoons Ras el Hanout (Moroccan spice mix)
- Salt and pepper
- 6 pitted dates, chopped
- Peel of one preserved lemon (Moroccan lemon), thinly sliced
- 1 bunch flat-leaved parsley, coarsely chopped
Finely chop the cauliflower in a food processor. Heat the peanut oil in a pan and add the cauliflower and pistachio nuts, stirring for 1 to 2 minutes over a medium heat. Season with Ras el Hanout, salt and pepper. Add the dates and lemon peel, stir well. Garnish with flat-leaved parsley.
Tip: you can also use a vegetable peeler to grate the cauliflower into small pieces.
