Chicken delights - part 2
Chicken is full of essential nutrients that your body needs, while carrying fewer of the unhealthy qualities that other meats have. A boneless, skinless chicken breast is an excellent low-fat food that can be prepared in a variety of ways and that fits into many different cuisines.
Chicken strips with Parmesan crust
- 30 g / 1.1 oz breadcrumbs
- 30 g / 1.1 oz finely grated Parmesan
- ½ bunch flat-leaved parsley, finely chopped
- 1 teaspoon dried thyme
- Salt and pepper
- 4 chicken fillets
- 2 eggs
- 2 tablespoons peanut oi
In a bowl, mix the breadcrumbs with the Parmesan, flat-leaved parsley and
thyme. Season with salt and pepper. Cut the chicken fillets into strips measuring
around 1 cm thick. Break the eggs into a bowl and beat them.
Turn the chicken strips in the egg mixture and then in the Parmesan mixture,
making sure they are well coated. Place them next to each other in a dish.
Heat the oil in a suitable frying pan and fry the chicken strips, in portions,
until they are crisp on all sides.
