Dive head first into the perfect Cherry Clafoutis
Clafoutis may sound like a Greek recipe, but it is not. It's a classic French baked dessert with fruit, traditionally cherries, but you can also use prunes, apples, figs or berries. This sweet specialty of the Limousin region is somewhere between a custard and a pancake, and it comes with a no leftovers guarantee.
Making Clafoutis may sound more difficult than it is. This treat is one of the easiest desserts you can make - ridiculously easy. You just blend the ingredients for the batter, add the fruit, bake and dive in. GO!
- ½ cup/ 60g flour
- ½ tsp baking powder
- 3 eggs
- ½ cup / 60g sugar
- 1 ¼ cup / 300ml milk
- ½ tsp vanilla extract
- Pinch of salt
- ½ tbsp butter, softened, for greasing
- 1 lb /450 g cherries, stoned if you prefer
Preheat the oven to 350°F/180°C/gas 4.
Mix all the batter ingredients with a pinch of salt in a blender or food processor until totally smooth.
Meanwhile, grease your baking dish with the softened butter. Pour in the batter. Top with the cherries.
Bake for about 30–35 minutes, or until puffy and golden.
