'Nuts about fruit' crumble
Nuts about rhubarb, apple, pear, cranberry, pineapple, peach ...? Pick your favorite fruits to make this fresh 'n' juicy, lightly spiced crumble with a super-crunchy topping.
Ingredients
- 4 sticks of rhubarb, chopped into chunks
- 2 cups sliced apples
- 2 cups sliced green pears
- 1½1/2 cups fresh cranberries
- 1 cup pineapple chunks + juice
- lemon juice
- 1/3 cup granulated sugar
- 1 tbsp. agave or honey
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 4 tbsp. melted butter
- 2 tbsp. melted coconut oil
- 1/3 cup chopped walnuts
Preheat oven to 300°F/150°C.
In a large bowl, toss your fruit and add in ¼ cup lemon juice. Set aside. In another bowl, combine melted butter, sugar, spices, and coconut oil. Add in honey and a little bit of your leftover pineapple juice as well. Add ¾ of the sugar mixture to your fruit and coat evenly. Pour the fruit evenly in a baking dish. Pour the leftover sugar/butter/oil mixture on top.
Bake for 1 hour. After 30 minutes, add the nuts. Mix and serve.
