Chicken delights - part 1
Chicken is full of essential nutrients that your body needs, while carrying fewer of the unhealthy qualities that other meats have. A boneless, skinless chicken breast is an excellent low-fat food that can be prepared in a variety of ways and that fits into many different cuisines:
Chicken drumsticks with apricots
- 1 teaspoon of butter
- 2 onions, cut into rings
- 8 chicken drumsticks
- 2 tablespoons chicken seasoning
- 16 apricots
- 50 g / ½ cup raisins
- 200 ml / 1 cup / 7 fl oz chicken stock
- ½ bunch flat-leaved parsley, coarsely chopped
Heat the butter in a pan. Sauté the onion rings until transparent. Remove them from the pan and set aside. Season the drumsticks with chicken seasoning. Fry until golden brown on all sides. Add the sautéed onion, apricots and raisins to the pan. Cook for another few minutes. Pour over the chicken stock and bring to a boil. Reduce the heat and cover the pan, leave to cook for another 15 to 20 minutes over a low heat. Garnish with parsley.
