Quick tip on how to make the perfect steak
Preparing a juicy steak involves more than pulling it right out of the fridge and throwing it into the pan. Before you can say ‘mmmmmmeat’, the outside is overdone while the center is still cold.
Did you know… if you put a cold steak in a hot pan, the temperature of the pan drops drastically? The steak will not sear but it will cook instead, so you will end up with a rubberish piece of meat. No nice brown crust, no taste, no nothing.
Did you know… if you bring the steak up to room temperature before preparation, it will be finished sooner and the outer layers will not get the chance to carbonize?
This is how you do it…
Take the steak out of the refrigerator and let it rest in a covered container long enough to reach room temperature. This way the temperature drop will be smaller when the meat enters the pan. Bake or grill it immediately after that to minimize contamination.
