Cherry Tomato Tarte Tatin
- 1 onion, thinly sliced
- 2 tbsp olive oil
- Pinch of salt
- 2½ cup cherry tomatoes
- 1 roll puff pastry
- ½ cup Parmesan cheese, grated
- 2 handfuls of shredded fresh basil leaves
- Salt and pepper
- Parmesan shavings
Preheat your oven to 200 °C / 400 °F. In a pan - on medium heat - caramelize the onions for about 10 minutes until golden brown.
Take a 24 cm / 9.5 inch pan. Put the tomatoes in the pan. Sprinkle with olive oil and roll around untill each tomato is lightly coated. Sprinkle generously with salt and a bit of black pepper.
Take the caramalized onion and scoop these over the tomatoes. Sprinkle the grated parmesan and a hand full of shredded basil over the tomatoes.
Cover the tomatoes with the pastry. Tuck the sides in. Don’t press.
Bake for 25 minutes. Turn over on a big dish (so the tomatoes are on top) and sprinkle some shredded basil and parmesan shavings.
